How to Make Restaurant-Quality Spiced French Fries at Home

To embark on this flavorful journey, you'll need a few key ingredients. Start with russet potatoes, known for their ideal texture when it comes to achieving crispy fries. For the spice blend, Chef Jay recommends Chaat Masala and Gunpowder plus Sea Salt. Finally, keep some oil handy for frying.
II. Preparation:
Begin by washing and peeling the potatoes, ensuring a clean canvas for your fries. Cut them into uniform strips, allowing for even cooking throughout. To enhance the final result, soak the potato strips in cold water for approximately 15 minutes. This step aids in removing excess starch, setting the stage for the ultimate crispiness.
III. Frying to Perfection:
With your spice blend ready, it's time to move on to the cooking process. Heat oil in a deep frying pan or Dutch oven. We will be frying our potatoes twice (at two different temperatures) in order to get that restaurant quality perfection. Start with a temperature of around 225 degrees Fahrenheit. Carefully add the potato strips in batches, being mindful not to overcrowd the pan. Fry them for approximately 7-9 minutes. Remove potatoes from oil and place on a cooling rack or spread of paper towels. Next, heat the oil 360 degrees Fahrenheit and place the potatoes back in the oil for the second fry. Continue to fry the potatoes until they turn into a glorious golden brown, achieving that desired level of crispiness. Once done, remove the fries from the oil and let them rest on a paper towel-lined plate, allowing any excess oil to drain.
IV. Adding the Finishing Touch:
While the fries are still hot and sizzling, transfer them to a spacious mixing bowl. Sprinkle the desired spice blend over the fries, ensuring each strip is generously coated with the aromatic goodness. Toss the fries gently with the spice and salt, letting the spices envelop them in a mouthwatering embrace.
